Meals for Afternoon Energy

Shrimp Pizza on Rice

3 cups fat-free cooked rice

1/ 4 + 2 tbsp. egg substitute

2 cups fat-free shredded mozzarella cheese

1 cup fat-free pasta sauce

1 1/ 2 cups shrimp, cooked and diced

1 /4 cup fat-free Parmesan cheese

 

Directions:

Preheat oven to 450 degrees. Lightly spray 12-inch pizza pan or two 9-inch pie plates with nonfat cooking spray. In a medium bowl, combine rice, egg substitute and 1 cup mozzarella cheese; mix until ingredients are blended. Press mixture into prepared pan and bake in preheated oven 15 to 20 minutes. Spread pasta sauce over rice crust and top with shrimp. Sprinkle with remaining mozzarella Parmesan cheese. Bake an additional 10 to 15 minutes, until cheese is melted and lightly browned.
